Many people often mistake crystalized honey as ‘spoiled’, but in fact, honey doesn’t spoil, rather it crystalizes over time, without compromising its quality. Honey becomes crystallized honey when it’s sugars separate from its water content thus forming ‘crystals’. These ‘crystals’ continue to form throughout the honey giving it a thicker texture and lighter color.
